Mexican Rare a Bit

Ingredients
Bread slices 6
Butter 2 tsp

Cut the bread slices in circles.
Roll them and butter one side.
Press into the cavities of a greased muffin tray with buttered side up.
Bake in a pre heated oven at 200.celcius for 7to 10 minutes.

For Filling:
 
Oil 2 tsp
Onion 1/2 cup Chopped
Corn 1 tea cup Cooked
Tomato deseeded 1/2 cup  Chopped
Capsicum deseeded   ½ cup  Chopped
Green chilies 1/2 tsp  finely chopped
Salt & black pepper ½ tsp and 1/4tsp respectively
Lemon juice  ½ tsp.

Method:

Heat oil & fry onion till light pink in color.
Add corn capsicum, green chili & tomatoes & fry for 1minutes.
Add salt pepper and lemon juice. Mix well .Turn off the flame.

For Baking:

Tomato ketchup ¼ tea cup
Grated Cheese  3 tsp

Fill mixture in each toast case & sprinkle cheese on top. Spread a little ketchup on the edge of the bread .Dot in the center.
Bake for 5-10 minutes in a pre- heated oven at 250 for 7 to 10 minutes.
