Pav Bhaji

 
BHAJI
 
Ingredients                   
 
Ghee  2table spoon
Jeera  ½ tsp
Heeng 2pinchs
Onion  2cups chopped
Tomato puree     1cup
Salt  1tsp
Red chili powder ½ tsp
Dhania powder 1tsp
Haldi powder   ½ tsp
Garam masala  ¼ tsp
Khara masala  ¼ tsp
Kala namak   ½ tsp
Chat masala 1tsp
Potatoes ½ kg
Cabbage 1cup shredded
Peas ½ cup
Ghiya 1cup shredded
Carrot ½ cup shredded
Green chili  Ginger  1chopped   1tsp paste
Water 1cup
 
METHOD:-
 
Heat ghee in a pressure cooker, add jeera heeng.
When jeera turns brown, add onion sauté it.
Add tomato puree & all the masala, starting from salt until chat masala.
Add all the vegetables, starting from potatoes until water.
Pressure cook until three whistles. Turn off the flame.
When pressure eases open the cover& mash it thoroughly.
Simmer it for 5 minutes.
 
(Onion 1cup chopped
Salt   ¼ tsp
Red chili powder  1/8 tsp
Lemon juice          1-2 tsp ) MIX ALL
 
BUNS 18            
BUTTER  100 Gms.                                                         
Cut the bun in two, butter the cut side & fry on the griddle (tawa).        
Serve with onion and Bhaji garnished with chopped coriander.
