Chole Bhature

 
CHOLE
 
Ingredients        
 
White chana 1-cup soaks over night in 3cups of water.
Pressure cook with ½ tsp of salt, soaked water
Plus 1cup tea water for 20 minutes.
 
Red chili powder   ½ tsp
Black pepper  ¼ tsp
Black rock salt  ¼ tsp
Chat masala   1tsp
Dry mango powder  1tap
Garam masala  1/4tsp
Khara masala   ¼ tsp
Ginger green chili  1tsp   paste
 
Mix all to the chana when the pressure eases.
 
Oil  3tbs
Jeera  ½ tsp
Black cardamom 1
Bay leaf  1
Heeng  1/8 tsp
Ajwain ½ tsp
Coriander 1tsp
 
METHOD
 
Heat oil. Add all and the chana with all the water.
Cook on low flame for 5 minutes. Turn off the flame.
 
 ONION
 
Onion  1cup cut in circles
Lemon juice 4tsp
Salt 1tsp
Red chili powder  ¼ tsp
MIX ALL
 
BHATURE
 
Ingredients         
 
Maida   500 gms
Salt  ½ tsp
Yogurt   2tsp
Oil   2tsp
Soda water enough to make a soft dough.
 
Mix al to make a soft dough.
splash with 2tsp oil cover and leave it for 1 hour.
 
Oil  for frying
 
Make small balls of the maida dough. Grease with oil
Heat oil. Roll the balls and deep fry.
SERVE WITH CHOLE AND ONION
