Anchiladas

Take 3 Maize Tortillas.

 Filling Ingredients 

1 Cup               Shredded Capsicum

1 Cup               Shredded Onion

1 Cup               Shredded Cabbage

1 Cup               Shredded Carrot

½ TSP             Salt

½ TSP             Red Chilli powder

2 TSP              Lemon Juice

1 TSP              Green Chilli-Chopped

1 TSP              Green Coriander

2 TSP              Butter

 

Heat a pan, add butter, add onion and stir fry, until just pink. Add all the other ingredients, stir fry for 1 minute and turn off the flame. The filling is ready.

 

Red Sauce for toping

1 Cup               Tomato puree (Godrej puree)

1 TSP             Salt

½ TSP                         Sugar

1/8th TSP            Red chilli powder

Mix all. The Red sauce is ready.

 For baking

Take an oven proof dish. Grease it with butter.

Take a Tortilla, put the 1/3 part of the Filling on the center of the Tortilla (dividing it into 2 parts) and fold it. Place it in the baking dish with folded side down.

Make 2 more tortillas the same way and put them in the baking tray.

Brush them with butter and spread the Red sauce over it.

Bake them in preheated oven at 200 Degree celcius for about 6-7 minutes.

Take out from the oven, Garnish it with Pic Del Gallo Salsa and serve hot
